• 55g caster sugar
• ¼ pineapple, peeled, cored and thinly sliced
• 2 chai tea bags
• 300g low-fat vanilla yogurt
• 250g low-fat custard
• 8 sponge finger biscuits
• 1tbsp pistachios, chopped

Step by Step

1 Combine 125ml water and the caster sugar in a small saucepan, and stir over a low heat until the sugar has dissolved. Add the pineapple and chai tea bags. Simmer for 2-3 mins until the pineapple is tender but still holds its shape. Leave to cool. 

2 Discard the tea bags and drain the pineapple over a bowl, retaining the syrup. In a separate bowl, combine the yogurt and custard. 

3 Dip the sponge fingers in the reserved syrup and layer in a serving dish with the yogurt mixture and pineapple. Sprinkle over the pistachios, and serve.
